4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed the three compartment sink in-use to wash, rinse, and sanitize dishware without proper levels of sanitizer. Observed a large air bubble in the sanitizer dispenser line. COS sanitize compartment drained and refilled manually. Concentration checked via test strips to be 300-400 ppm. Dishware will be rewashed and sanitized. Work order will be placed for dispenser.

Observed no sanitizer made and ready for use while food handling was happening upon arrival. Sanitizer of proper concentration must be prepared and ready for use any time food handling is occurring in the kitchen. COS Manager prepared sanitizer
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed a dry wiping cloth on top of air drying, clean dishes. Observed a dry wiping cloth on the prep cooler. Observed a dry wiping cloth on the pizza boxing station. Wiping cloths may be used to sanitize surfaces but must be stored in a bucket of sanitizer between uses. Dry wiping cloths may not be used for wiping surfaces as a means of cleaning. COS wiping cloths moved to dirty laundry.

Observed the Food Service Permit not displayed. Observed the facility to have an old inspection displayed. Both the most recent inspection report and the Food Service Permit must be posted for the public.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Lack of use of chemical test kit when using chemical sanitizer at three-compartment sink. COS test strips found in office drawer, PIC informed that sanitizers should be tested daily.
