6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed TCS food items in the preptop cooler facing the front door to be held between 45-48 degrees. CA: All TCS food items must be cold held at or below 41 degrees. COS: All TCS items in the preptop cooler were discarded voluntarily.
10D - food properly labeled; original container
Regulation: 511-6-1.04(4)(d) - food storage containers identified with common name of food (c)
Observed food items throughout the facility removed from original packaging or made in house without a label identifying the common name of the food. CA: All food items removed from original packaging or made in house must be labeled with the common name of the food. COS: common name labels added to the food items.
16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(r) - system maintained in good repair (p, c)
Observed the drain beneath the 3-compartment sink to be backed up and holding water. CA: all plumbing fixtures must be maintained to ensure proper drainage, avoid potential contamination of the warewashing sink and avoid the discharge of grey water on the floor of the facility. Owner will contact North GA Rooter about the concern.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(6)(r) - single-service/single-use articles, use limitations (c)
Observed a staff member wash and dry single use gloves. CA: single use items including gloves are not permitted for reuse. COS: gloves removed, hands rewashed and fresh gloves donned.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed several ripped cooler door gaskets, three prep top cooler lids in disrepair, standing water in the bottom of the older preptop cooler, and the accumulation of residue and food debris along the edges of the preptop cooler lids and gaskets. CA: all equipment must be maintained in good condition and kept clean. COS: lids will be addressed and edges will be sanitized.
