12A - contamination prevented during food preparation, storage, display
Observed that the walk-in-freezer has ice build-up around the condenser and on the floor. Facility has containers underneath to catch the ice and prevent it from dripping onto food items, but ice has dripped onto food containers in a few places. Facility advised that a work order is needed.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed ready-to-use lids for storage containers with debris from the 3-compartment sink. Current splash guard appears too small to properly protect the dishes from contamination. Advised manager that the lids need to be recleaned and that the splash guard needs replacing with one that can properly protect the dishes. COS items cleaned and a large cutting board used as a temporary splash guard.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(10)(g)(1)&(3) - kitchenware and tableware, single-service/-use items properly handled to protect food-/lip-contact surfaces (c)
Observed that single-use take-away containers were not stored covered to prevent contamination and that some containers had food debris. Single-use items must be stored in a manner that prevents their contamination. Staff advised to leave the plastic coverings single-use items arrive in on the items to prevent contamination.
17B - garbage/refuse properly disposed; facilities maintained
Regulation: 511-6-1.06(5)(o),(p) - using drain plugs; maintaining refuse areas (c)
Facility has a shared dumpster. Observed that both dumpsters are missing drainplugs. Advised the manager and informed her that all facilities using shared dumpsters are responsible for their maintenance.
