4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Facility was utilizing the 3-compartment sink with an improper concentration of QUAT sanitizer. Facility was utilizing the QUAT tablets. CA: QUAT sanitizer must be maintained at concentrations between 200-400 ppm. COS: Inspector and staff worked together to determine proper water level and liquid QUAT sanitizer. Facility does have appropriate test strips and will utilize them to check concentration of compartment.
