4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed the 3 compartment sink QUAT sanitizer dispenser dispensing sanitizer below 200 ppm. Initially, QUAT sanitizer was being dispensed with water above 120 degrees. Facility does not have a dishmachine and facility uses the three compartment sink dispenser for filling QUAT buckets. CA: Appropriate concentrations of QUAT sanitizer are between 200 and 400 ppm. COS: employee found air bubble in line and was able to flush the line. Water temperature was adjusted but cold water pressure issue was identified from this. QUAT buckets maintained at 300 ppm now.

Observed significant mold-like debris on the ice dispenser of the Coke machine in the dining area. Observed deep etching and staining on a cutting board in the kitchen. Observed food debris on a pizza cutter, can opener, and cutting board in the kitchen. CA: all food contact surfaces must be cleaned and sanitized as often as necessary to prevent debris accumulation. COS: surfaces cleaned and sanitized with QUAT sanitizer.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(3)(f) - lighting intensity, adequate in food prep, storage & service areas (c)
Observed all but one lightbulb under the vent hood over the pizza oven to be burnt out. CA: light intensity must be adequate for cleaning and food handling. Light bulbs must be changed when burnt out. COS: Manager will have maintenance address issue.
