Observed several dented cans stored in the dry goods closet with received dates on the top. CA: dented cans must be removed from general storage and discarded or sent back to the supplier. Dented cans may not be served due to risk of botulism. COS: cans removed from shelves and placed on cart for disposal

Observed two trays of chicken drumsticks/thighs hot held between 115-133 degrees. One tray was in the pass thru warmer and one in the warmer cabinet. CA: Hot held TCS food items must be maintained at or above 135 degrees to prevent bacteria growth. COS: both trays rapidly reheated in the oven to 167-171 degrees.
