6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed eggs and chicken being held in drink cooler at a temperature of 45 degrees F for cold holding as the main walk in cooler was down. C/A - keep ALL TCS food below 41 degrees F for cold holding. COS - manager tossed eggs and chick into trash.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed no paper towels at handsink. C/A - Keep handsink fully stocked at all times.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(f) - poisonous or toxic materials containers, prohibition (p)
Observed residential ant and roach spray in kitchen. C/A - do NOT use residential pest spray in kitchen. Use only commercial licensed pest control with food safe pest spray. COS - manager trashed spray.
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(r) - food storage, prohibited areas (c)
Observed food stored on floor of cooler and kitchen floor. C/A - keep all food at least 6" off of the floor.
