Observed no dates on food in walk in and reach in coolers. C/A - date ALL food kept longer that 24 hours after removing from package.
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(r) - food storage, prohibited areas (c)
Observed food stored on floor of walk in cooler. C/A - store all food at least six inches above floor.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Observed pans stacked while wet (wet nesting) on drying rack. C/A - allow dishes to air dry before stacking.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(f) - drying mops (c)
Observed mops left piled in sink to dry. C/A - hands mops head up to air dry to prevent mildew growth.
