OBSERVED FRIED CHICKEN ON THE STEAM TABLE READING 118-1125. THE HOT WATER WAS NOT FILLED ALL THE WAY BY TOUCHING THE BOTTOM OF THE PAN. CA: ENSURE ALL THE STEAM TABLE PANS ARE FULLY FILLED WITH HOT WATER UNTIL ITS TOUCHING THE BOTTOM OF THE PAN. COS: PAN OF FRIED CHICKEN WAS DISCARDED, WATER WAS FILLED TO THE BOTTOM OF PAN, NEW CHICKEN WAS ADDED.
