Observed salad bar on buffet uncovered. C/A - cover all food sitting out on buffet.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed tables being cleaned only with spray sanitizer and wiped off as demonstrated by manager C/A - place sanitizer in labeled bucket and use rag. Wipe down tables with sanitized water and allow to air dry. Use quat sanitizer striped to regularly test concentraton.

Observed sanitizer in unlabeled bottles on shelf. C/A - label any plain chemical storage bottles with label of chemical it contains.

Observed residential use ant and roach spray stored in kitchen. C/A - do NOT use any residential use only pesticide in establishment. Use only commercial pest control service that have food safe chemical. COS - manager tossed bug spray.

Observed grease leak from one fryer onto floor. C/A - repair ASAP to stop leak.

Observed grease build up on outside of fryers. C/A - clean more regularly to remove grease build up.

Observed old, rusty, can opener that was not working still sitting out on counter. C/A - remove all damaged or nonworking equipment from kitchen.
