Observed cans in main kitchen area dented, compromising hermetic seal. COS: Compromised cans were discarded. CA: Inspect product upon receipt to ensure package integrity.
6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed TCS foods in cold hold units throughout facility held above 41 deg F. COS: Compromised / out of temperature foods were discarded. CA: Adjust units / seek repairs to ensure TCS foods are held at 41 deg F or below.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.07(3)(a) - handwashing cleanser, availability (pf)
Observed hand sink in main kitchen area not supplied with hand soap. COS: Hand sink was properly supplied with hand soap. CA: Ensure all hand sinks are supplied with hand soap and hand drying provision during operation.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed food contact surface of potato cutter with excessive food debris build up. COS: Equipment was properly cleaned. CA: Clean equipment / utensils often enough to prevent build up.
