Observed the container of sauces stored on the prep table in the main kitchen, wings (chicken) not covered or protected from contamination as required. Corrective action (CA) foods shall be covered or resealed properly unless they are actively cooling. Person in charge (pic) was informed and instructed to cover and maintain the food covered.

Observed buildup of food debris on doors, gaskets in the kitchen and prep area reach-in units. Also, heavy grease on the fryer and line units.

Observed peeling and rusty shelves around the kitchen and inside the reach-in cooler. Ensure shelves are in good repair.
