Observed paper rolls used for hand drying to be located in top shelf of the bathroom. The white paper rolls were protected in their original plastic wrapping, although the brown paper rolls were without any protective covering. Please do not store cleaned or sanitized equipment in toilet rooms.

Observed several flies in facility. Discarded a small pan of mozzarella cheese in prep top cooler due to contamination from a fly. Reminded employee to keep prep top cooler doors closed when not in use. Ensure that fly problem is addressed.

Facility had test strips, but they were expired. Advised PIC to order new test strips to ensure employees are aware if proper sanitizer concentration is present.

Observed multiple live flies throughout kitchen. CA: Contact Pest Control Operator for fly control devices/fly traps to put in kitchen. Remind employees to keep the doors closed at all times. Ask customers to not hold door open for extended periods of time when they are going in and out.
