The following items stored with the front counter reach-in cooler measured above 41F for less than 4 hours: a pan of sliced tomatoes (45F-46F), a pan of sliced ham (47F), and a pan of sliced turkey (47F). Per the manager on duty, all items were removed from the operational walk-in cooler and placed in the reach-in cooler approximately 3 hours prior to measurement. The inspector noted that the cooler was in a defrost setting prior to measurement. All items were placed in the walk-in cooler for rapid cooling; verified cooler was measuring 41F prior to exit.
