A package of ready-to-eat sliced ham stored within the small reach-in breakfast cooler measured 70F. The inspector noted all other items stored within the cooling unit measured 41F or less. Per the manager on duty, the ham was removed from refrigeration at 5AM and then placed back in the cooler at 10:30AM for cooling. The ham was discarded.
