Observed several plastic and metal food containers wet-stacked on the racks adjacent to the 3-compartment sink. After cleaning and sanitizing, equipment and utensils:

1. Shall be air-dried or used after adequate draining before contact with food; and

2. May not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry.

Food employees rearranged food containers to properly air-dry.

Observed employee personal cellular phone stored on top of the prep-top counter in the main kitchen area. Designated Areas for Employee Activity.

1. Areas designated for employees to eat, drink, and use tobacco shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination.

2. Lockers or other suitable facilities shall be located in a designated room or area where contamination of food, equipment, utensils, linens and single-service and single-use articles cannot occur.

Person in charge moved personal phone to a designated area for employee belongings.

Observation Observed facility lacking response procedures for vomiting and diarrheal events. Rule (6) Responding To Contamination Events. A food establishment shall have procedures for employees to follow when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the food service establishment. Corrective Action PIC was provided a copy of DPH Norovirus cleanup procedure.
