6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed several food item stored in reach-in cooler located in main kitchen cold holding at temperatures greater that 41°F (see temp log). Cold holding shall be 41°F or less. Person in charge discarded food items.
