Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed sliced tomatoes and sliced ham in reach-in cooler without date marking. Rule: Refrigerated, ready-to-eat, time/temperature control for safety food prepared and held in a food establishment and time/temperature control for safety food prepared and packaged by a food processing plant shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, when held at a temperature of 41°F (5°C) or below for a maximum of 7 days. The day of preparation or the day the original container is opened shall be counted as Day 1. Corrective Action: PIC discarded tomatoes and date marked ham.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(6)(r) - single-service/single-use articles, use limitations (c)
Observed large Old Bay containers used to store MSG, sauce and seasonings. Rule:
- Single-service and single-use articles may not be reused. Corrective Action: PIC transferred to multiuse food grade containers.
