Observed several time/temperature control for safety foods cold holding above 41°F. See Temperature Observations. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. Person in charge discarded food items.

Observed several TCS food items cold holding above 41*F. Please see temperature log. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. PIC discarded TCS items.

Observed one reach-in cooler in the main kitchen area that's reading at temperatures greater than 41F. Observed reach-in cooler temperature reading at about 45F. Equipment shall be maintained in a state of repair and condition that meets the requirements specified under subsections (1) and (2)of this Rule. Must correct within 72 hours.
