Observed big dog frankfurter in reach-in cooler with prep date of 2/7 and discard date of 2/13 in reach-in cooler in main kitchen. Rule A food that requires datemarking shall be discarded if it: (i) Exceeds 7 days, not including the time that the product is frozen; P Corrective action: PIC discarded frankfurters.
