Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed containers of sliced tomatoes in the reach-in cooler and prep-top coolers at temperatures above 41 degrees Fahrenheit. Food items shall maintain at a temperature of 41 degrees Fahrenheit or below when cold holding. Person in charge discarded tomatoes.
