Observed unapproved WDS300X installed above the prep sink. The unit is unplugged and no longer in use. Advised PIC Maintaining Premises. The premises shall be free of items that are unnecessary to the operation or maintenance of the establishment, such as litter or equipment that is nonfunctional or no longer used and litter.

Observed walk in cooler does not have enough light. Advised PIC to increase lighting in the walk in cooler. At least 10 foot candles (108 lux) at a distance of 30 inches (75 cm) above the floor, in walk-in refrigeration units and dry food storage areas and in other areas and rooms during periods of cleaning.

Observed handwashing sink in the main kitchen area next to the prep table not reaching adequate temperatures. Observed handwashing sink reaching only 75 degrees F. A handwashing sink shall be equipped to provide tempered water at a temperature of at least 100ºF (38ºC) through a mixing valve or combination faucet. Must correct priority foundation item within 10 calendar days. Person in charge placed a work order for the water heater.
