4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Quat sanitizer concentration in 3 compartment sink too low (below 150 ppm). CA: Person in charge (PIC) to ensure to maintain Quat sanitizer solution between 150 ppm and 500 ppm for all sanitizing purposes. Appears that tubing in 3 compartment sink is not properly mixing water and quat. PIC to create appropriately concentrated quat sanitizer mixture in "sanitize" compartment of 3 compartment sink by mixing the concentrated quat and water and testing with test strips.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed several scoops stored in bulk food containers with handles touching food. PIC removed scoops.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(b),(c) - manual warewashing, sink compartment requirement; drainboards (pf, c)
Tubing in 3 compartment sink is not properly dispensing sanitizer for the purpose of warewashing and cleaning food contact surfaces.
