Observed marinara sauce cooling on prep top cooler. CA: Food shall be cooled using rapid cooling equipment. CA: PIC put sauce in walk in cooler to rapidly cool.

Regulation: 511-6-1.05(1)(i) - nonfood-contact surfaces (c)
Observed shelving units used in walk in cooler and for prep with the accumulation of food debris. CA: Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling require frequent cleaning. COS: PIC will have shelving units deep cleaned. Site visit made on 1/29/26 and observed shelving detailed to site and touch.
