Observed multiple RTE TCS food items (grilled chicken, lasagna, cooked potatoes, Taboula, Hummus) held in facility past discard date. CA: A food that requires datemarking shall be discarded if it exceeds 7 days. COS: PIC had employee discard food items.

Observed cooked white rice and chicken marsala held in facility greater than 24 hours without datemark label. CA: TCS RTE food items are to be date marked for a maximum of 7 days. Day 1 starts when opened or prepped/ cooked. COS: PIC discarded food items.
