Observed employee prepare matcha latte & serve bakery goods while wearing watch on wrist. CA: Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. COS: Employee removed watch.
12C - wiping cloths: properly used and stored

Observed damp cloth hanging on front side of microwave oven in main kitchen area. CA: Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n). COS: PIC moved cloth to sanitizer bucket.

Observed cloths stored in sanitizer bucket at a concentration less than manufacturer's recommended level. Sanitizer reading 0ppm. Manufacturer's recommendation is 150-400ppm. CA: Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n). COS: PIC remade sanitizer to correct concentration.
