Observed personal items (employee reusable cups) stored in stock room on shelving with dry storage goods and throughout kitchen. CA: Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination. COS: Employee cups were relocated away from kitchen and dry good storage area.

Observed employee handeling food while wearing a braclet. CA: Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. COS: PIC had employee remove braclets.

Observed containers stacked without being properly air dried. CA: Equipment and utensils shall be air-dried or used after adequate draining before contact with food. COS: PIC had containers re washed and air dried.

Observed multiple TCS food items (deviled eggs/ mixture, cucumbers, shredded lettuce) holding at a temperature greater than 41F in reach-in cooler. CA: PIC moved all TCS items in cooler less than 4 hours into WIC to rapidly cool. Food Prodcuts in cooler greater than 4 hours were discarded. Work order to be placed for unit. PIC notified to not use cooler for TCS items until in good repair and Health authority notified.

Observed TCS items (cooked butter beans, cooked cabbage) holding at a temperature below 135F in holding cabinet. CA: PIC reheated TCS items to 165F.

Observed multiple TCS food items (cut lettuce, sliced tomatoes) cooling tightly covered in 2 door reach-in cooler in main kitchen area. CA: PIC removed lids and placed in freezer to rapidly cool. (Reviewed cooling methods: container type, shallow pans, etc.)

Observed wet wiping cloth not stored in sanitizing solution between uses. CA: Cloths were placed in sanitizer.

Observed multiple metal/plastic containers wet stacked in drink alley area. CA: PIC rewashed dishes and properly air dried dishes.
