Waffle House #1402

Observed employee drinks stored on counter next to and above single service items not stored in single service cups with lids and straws. CA: Employees shall consume food only in approved designated areas separate from food preparation and serving areas, equipment or utensil areas and food storage areas. However, drinking from a single service beverage cup with a secure lid and straw that is handled to prevent contamination of the employee’s hands, the container, exposed food, clean equipment, utensils and linens, unwrapped single-service and single-use articles will be allowed. COS: PIC removed cup and will talk with employees about using single service cups with lids and straws for all employee drinks.

Observed multiple containers of waffle batter (containing raw egg), cheese slices, multiple containers of smoked chicken sausage, and diced ham holding at a temperature greater than 41F in reach-in/cooler drawers (one unit) in main kitchen. CA: PIC stated some items had been restocked at 1pm, therefore food items were moved to other unit to rapidly cool. TCS item in unit greater than 4 hours was discarded. PIC placed work order for cooler.

Observed bottle of bleach stored in handwashing sink in main kitchen. CA: PIC removed bleach and placed in chemical storage.

Observed food employee remove soiled dishes from table and place in dirty dish area, and then take prepared plate of food to table without washing hands between tasks. CA: PIC had employee wash hands and educated when to wash.

Observed food employee crack raw egg with gloved hand, remove gloves, and don new gloves to prepare RTE toast without washing hands between tasks. CA: PIC had employee remove gloves, wash hands, and don new gloves. Food item was discarded.

Observed no handwashing sign at handsink in main kitchen area. CA: PIC printed sign and placed at sink.

Observed old labels still attached to clean containers. All old labels should be removed during the cleaning process. CA: Labels removed.

Observed employee wearing bracelet while preparing food. CA: PIC had employee remove bracelets.
