6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed TCS foods in prep cooler holding at a temperature greater than 41 F. CA: TCS food that are cold held must hold at 41F or less. CA: TCS foods placed in walk-in cooler to rapidly cool (tomato and was within 4 hours) and PIC chose to discard shredded lettuce.
