6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed TCS foods holding at a temperature greater than 41F in cooler. CA: TCS foods that are cold held must hold at 41F or below. COS: Food in unit less than 4 hours. Some heated to 165F or greater and others placed in freezer to rapidly cool.
