Regulation: 511-6-1.05(6)(l) - mechanical warewashing, hot water sanitization temperatures(p)
Observed mechanical dish machine not reaching temperature for sanitization. Highest temperature reached was 131F. CA: In a mechanical operation, the temperature of the fresh hot water sanitizing rinse as it enters the manifold may not be less than: For a stationary rack, single temperature machine, 165F; or For all other machines, 180F. PIC called ecolab for maintenance. PIC notified to not use dish machine until sanitizing correctly.

Observed ice bin in server alley, and bulk ice machine in main kitchen area not cleaned at a frequency necessary to be maintained clean to sight and touch. CA: Food contact surfaces to be cleaned at a frequency necessary to prevent soil accumulation. PIC will have ice bin & ice machine detailed clean by correct by date.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(j) - hair restraints (c)
Observed employee preparing to-go order on main kitchen line without a hair restraint. CA: Employees preparing or handling food shall use hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch. COS: PIC provided hair net.

Regulation: 511-6-1.07(3)(d) - handwashing signage (c)
Observed no handwashing signage posted at 2 handsinks in main kitchen area. CA: A sign or poster that notifies food employees to wash their hands shall be provided at all handwashing sinks used by food employees and shall be clearly visible to food employees. PIC notified to have signs posted.
