Observed open pan of raw bacon stored directly above fully cooked roast in rack in the walk in cooler. CA: Food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from ready-to-eat food such as fruits and vegetables, and cooked ready-to-eat food. COS: PIC moved fully cooked roast beef to top shelf.

Observed bag of precooked commercially processed chicken directly touching bag of raw chicken breast in prep sink. CA: Food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from raw ready-to-eat food such as fruits and vegetables cooked ready-to-eat food. COS: PIC cooked pre cooked chicken to minimum 165 F.

Observed employee cell phone stored above food prep surface in main kitchen. Observed employee bags and jackets store on shelf in dry storage area directly touching dry food. CA: Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination. COS: PIC moved employee personal items to a designated area away from food, equipment, linens, and single use articles.

Observed empty employee reusable cups stored directly on equipment in kitchen. CA: Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination. COS: PIC moved empty reusable cups to office.
