Observed gaskets/seals on cold holding units in poor repair ( 2-door merchandiser and 2-door reach in cooler).
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Inside 2-door merchandiser, reach-in cooler, front food service fridge not cleaned to prevent accumulation of soil residue. Side of fryers, hood, grill with accumulation of old food debris/grease. Clean often enough to prevent these type of accumulation.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Floor under fryer with accumulation of grease,wall behind cook line wth accumulation of grease.To prevent attraction for pest clean these areas more frequently.
