Observed 3 out of 4 Reach-In Coolers not holding ambient temperatures below 47 degrees Fahrenheit. Also observed multiple Time/Temperature Control foods (dairy) temping above 41 degrees Fahrenheit. CA: All cold-holding units must be holding temperature at or below 41 degrees Fahrenheit. Equipment must be maintained so they properly holding temperature. Any food that is out of cold-holding temperature control for longer than 4 hours must be discarded or put on ice to maintain temperature until equipment is properly functioning.
