4-1A - food separated and protected

Observed cabbage stored in walk in cooler directly next to stack of shelled eggs, and cabbage stored on cardboard box full of canned bamboo shoots next to meat prep sink. Cabbage is a cooked product and never served fresh, but should be stored above all proteins and kept away from meat prep areas. Corrected on site: mess was removed and cabbages were placed in different storage areas away from these places.
6-2 - proper date marking and disposition

Observed several bags of raw beef in walk in freezer and other raw produce in walk in cooler with no date marks. Any product being kept in the kitchen for longer than one day is required to be marked with either date of receipt/preparation or date of discard.
15C - nonfood-contact surfaces clean

Observed gaskets on reach in cooler doors next in cooking area that were in disrepair. Corrective Action: Replace gaskets.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(2)(a) - floor, walls, & ceilings, cleanability (c)
Observed missing coving in the kitchen in the cooking area. Observed multiple light shields damaged and filled with debris. Observed walk in cooler walls with grime on them. Observed ceiling tiles in women's and men's bathrooms with water stains on them.
Corrective Action: Keep all walls, floors, ceilings, and coving in good repair and cleaned.
