3-1C - food in good condition, safe, and unadulterated
Regulation: 511-6-1.04(3)(e) - package integrity (pf)
Observed vanilla extract container with lid broken so the container could not be closed. COS: Vanilla extract was discarded; management kept lid to use for staff training. Ensure all food packaging is in good condition. Any food packaging that is damaged or broken should be discarded immediately.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(c) - cooking & baking equipment (c)
Observed scoops for the sugar and flour left inside the container with handles touching food. CA: All scoops must be stored with handles sticking out of dry food or placed elsewhere in the container.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Observed handles on hand sink that were sticky and the Kitchen Aid covered in food debris after not being used for several days (per management). Corrective Action: Keep all surfaces clean.
