6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed meatballs being held at 85 degrees. TCS foods shall be held at 135 degrees or warmer. Meatballs were discarded.
11D - thermometers provided and accurate
Thermometers shall be placed inside coolers and freezers in a conspicuous place to ensure foods are being kept at proper temperature of 41 degrees or below.
