Observed containers tortillas stored in grocery bags under prep tops.
CA: Food shall only contact surfaces of equipment and utensils that are food safe and cleaned/sanitized or single-service and single-use articles.
COS: PIC removed tortillas from tortillas from grocery bags.
6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed container of cooked ground beef not cold held 41°F or below in WIC (see temp log).
CA: TCS foods shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above.
COS: PIC stated beef was placed in WIC overnight to cool, cooling parameters were not met therefore beef was discarded.
