The food-contact surfaces of cooking and baking equipment shall be cleaned at least every 24 hours. This subsection does not apply to hot oil cooking and filtering equipment if it is cleaned as specified under subsection (7)(b)3(v) of this Rule.

The cavities and door seals of microwave ovens shall be cleaned at least every 24 hours by using the manufacturer's recommended cleaning procedure. Note: Observed build-up of debris on door seal of microwave. PIC to clean microwave and ensure it is properly cleaned every 24 hours.

- Single-service and single-use articles and cleaned and sanitized utensils shall be handled, displayed, and dispensed so that contamination of food-and lip-contact surfaces is prevented.
- Except as specified under paragraph 2 of this subsection, single-service articles that are intended for food- or lip-contact shall be furnished for consumer self-service with the original individual wrapper intact or from an approved dispenser. Note: Observed coffee cup lids in drawer under cereal dispenser to be out of the packaging and debris on top of them. PIC to ensure lids and other single-use utensils are in their packaging or in a clean area to prevent debris from accumulating.
