PIC responsible for assuring proper dish procedures being followed, employee illness reporting procedures followed. (Discussed with PIC at time of inspection, dish procedure modified).
1-2B - certified food protection manager
Regulation: 511-6-1.03(3)(c) - certification documentation (pf)
Observed expired Food Manager Certification. Must have CFSM recertified or new CFSM within 60 days of former CFSM leaves employment or certificate expires.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed PIC washing utensils using improper procedure (no sanitizer observed being used). (New person put in place; sanitizing utensils).
