6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed potentially hazardous food cold held at greater than 41 degrees Fahrenheit (dairy in carafe, cream cheese, yogurt in display cooler). CA: discard dairy placed in carafe for service period (or maintain at 41F or below), turn thermostat on display cooler to keep ambient lower (to keep food 41F or below).
1-2A - pic present, demonstrates knowledge, performs duties
PIC/CFSM must actively control: temperatures of TCS food.
1-2B - certified food protection manager
Regulation: 511-6-1.03(3)(a) - food safety manager certification (pf)
No Certified Food Manager for establishment. (posted CFSM no longer employed; have 60 days from date of last employment to replace CFSM).

Store food in tightly covered container (grits, sugar)
