Regulation: 511-6-1.04(4)(z) - miscellaneous sources of contamination (c)
Observed prep date resting inside chicken that was stored in lower portion of the PTC. C/A: Prevent labels from getting in food by using a sticker or tape. COS: PIC removed the label from the food and placed a new prep & discard date.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed employees personal items scattered around the front section around the cashier. Personal items were stored as same places as items that are intended for customers. C/A: Create a designated are for employee items.
