Observed potato salad, rice, and chicken wings improperly cold holding in WIC. C/a: Cold hold food at 41 degrees F or lower. Food should be thrown out.
11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.05(3)(a) - cooling, heating, and holding capacities (pf)
Observed WIC ambient at 51 degrees F. Observed foods stored within cooler not at proper temperatures. C/a: Have WIC repaired ASAP. Remove from walk in and store elsewhere in the mean time.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed scoop stored in flour and sugar containers. C/a: Store scoops outside of food product itself.
17C - physical facilities installed, maintained, and clean

Observed dust on ceilings above food prep areas. Repeat violation. C/a: Clean/wipe down ceiling tiles.
