Observed tzatziki sauce being cold held at 66 degrees Fahrenheit in a "cold pan" in the main kitchen. C/A: Maintain cold holding temperatures at 41 degrees Fahrenheit and below in all coolers. Establish a written procedure when using time as a public health control.
