Suggested using time control for TCS (time/temperature and saftey) foods in the self serving area. According to product, philly cream cheese shall be refrigerated. Facility already has written time control procedures filled out and posted on the reach -in-cooler door. ***SECOND REPEAT OF CODE VIOLAION 6-1A: COLD HOLDING. OBSERVDATION OF CODE VIOLATION(COLD HOLDING) ON NEXT ROUTINE INSPECTION WILL RESULT IN PERMIT SUSPENSION. *** To protect bagels and muffins, suggested that facility wrap each of the foods in saran wrap. Gave PIC an example of how to cover self serving sauce that was not stored under the sneeze gaurd. Fees will be charged accordingly for any violation which cannot be corrected on-site during inspection. Repeat violations may result in permit suspension. Except for nuts in the shell and whole, raw fruits and vegetables that are intended for hulling, peeling, or washing by the consumer before consumption, food on display shall be protected from contamination by the use of packaging, counter, service line, or salad bar food guards, display cases, or other effective means. (P) Corrective Actions: PIC used saran wrap to cover each of the muffins and the bagels.

Ensure a hair is tied back and/or hair net is worn while handling foods and cleaning dishes. Ensure a sneeze guard is placed over bread, salsa, and cheddar cheese by next routine inspection. Violation will be marked accordingly. Ensure the following methods are used to clean dining tables; 1. two bucket method( one bucket with water) (one bucket with sanitizer) 2. spray bottle containing sanitizer and disposable wipes 3. one bucket with soap and water, one bucket with water, one bucket with sanitizer Ensure inspection report, CFSM, and kitchen inspection score is posted in the bar area. Facility already has time control written procedures filled out and posted on reach-in-cooler. The following documents were given to PIC (person in charge); 1. New rule checklist (signed) 2. FDA sesame allergy fact sheet and poster 3. employee health policy PIC was coached on the new rule change.
