Routine
Cold-Holding was assessed and incompliance unless noted in the temperature log. No foods were hot holding at the time of inspection. No foods were cooked, chopped, sliced, cooled, reheated to hot hold, nor served during inspection. Suggested placing a sign on the reach-in-cooler door reminding staff members not store any TCS products going to residents in the cooler. Cold holding will be marked accordingly on next routine inspection if Milk is stored in the reach-in-cooler and the reach-in-cooler does not work. Fees will be charged accordingly for any violation which cannot be corrected on-site during inspection. Repeat violations may result in permit suspension. 12D: .04(4)(g)Observed a pan of multiple raw fish in standing water stored in the vegetable sink. Raw fruits and vegetables shall be thoroughly washed in water, in a sink designated for that purpose only, to remove soil and other contaminants before being cut, combined with other ingredients, cooked, served, or offered for human consumption in ready-to-eat form. (Pf) Corrective Actions: PIC (person in charge) removed the pan of raw fish to an approved location and sanitized the vegetable sink.

15A: .05(6)(q)1&3Observed reach-in-cooler held ambient air of 64.6F. At the beginning of the inspection, observed milk was the only TCS (time/temperature safety product) stored in the reach-in-cooler. An opening located within the top of a unit of equipment that is designed for use with a cover or lid shall be flanged upward at least two-tenths of an inch (5 millimeters). (C) Corrective Actions: PIC will not use the reach-in-cooler to store TCS products. Suggested PIC place sign on reach-in-cooler stating not store any TCS products such as mik.
