If fries can not be maintained at 135F, ensure time control is used. Ensure the box of chicken wings are kept 41F or below and is not left out in ambient air. Ensure a PIC (person in charge) is designated and present at all times. Ensure all designated PIC and food employees are trained on where the written procedures for a vomit and diarrhea event is posted and the reportable symptom and diseases. Gave the PIC the employee health policy in both english and mandarin. Fees will be charged accordingly for any violation which cannot be corrected on-site during inspection.
