4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed multiple food contact surfaces of microwaves at the cookline of the main kitchen stored as clean with staining and residue. Also observed food contact surface of the interior of the ice bin lid located at the wait station of the main kitchen stored as clean with black residue. Advised PIC that equipment food-contact surfaces and utensils shall be cleaned at any time during the operation where contamination may occur. Advised PIC to increase the cleaning frequency of the ice bin and interior of microwave.
16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(a) - plumbing system, approved (p)
Observed leak and constant dripping of water at the faucet at the bar's dump sink. Advised PIC a plumbing system shall be repaired according to law and maintained in good repair. Advised PIC to have the bar's dumpsink repaired.
15C - nonfood-contact surfaces clean

Observed nonfood contact surfaces on cooling rack with severe rusting and debris. Advised PIC that nonfood contact surfaces shall be kept clean in order to prevent contamination. Advised PIC to thoroughly clean nonfood contact surfaces of cooling rack.
