observed raw chicken in walk in cooler with dispose by date of 08/08/2025. CA-disposed of opened/prepped food within 7 days. COS-disposed of at time of inspection
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.05(10)(b) - wiping cloths, air drying location (c)
observed wiping cloths sitting on prep table and not being used. CA-place in sanitizer buckets while not actively using. COS-removed and placed in dirty linen basket.
