Observed half gallons of buttermilk with expiration date of 5/8/2026 that is still in use.
11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed time/temperature control for safety (TCS) food items not effectively cooling fir safety based on method. (ex. pans of food in walk in cooler that are stacked on top of each other that are still hot) not allowing for adequate cooling air flow. Advise to single layer pans of food that are cooling or to move to walk in freezer after preparation.
